Actual position and research subject

Thématique de recherche : Guy Della Valle is a senior scientist at INRAE-BIA. He has studied grain foods processing and starch materials properties, focusing on the development of biopolymers foams, and more recently Food Oral Processing, approached by material science, rheology and modelling. He has managed various projects on Novel Foods Aided Design since 2000, and has recently addressed the use of scientific models for academic training and for the food industry, using knowledge transfer tools.
